I think that one of the most important ingredients in a great recipe is an ingredient that doesn't need to be there. You don't need to make it for an instant, but if you have it in your cupboard, it makes the experience even better. That's what I mean about adding a healthy food like this to a recipe that otherwise requires some fancy flour. But in this case, it's easy. And you'll learn a lot just by trying it! A couple of weeks ago, I posted about my favorite quick side dish. But before I tell you that recipe, let's talk about the process I used to make it. First, you'll need a skillet, some water, salt, and a couple of cloves of garlic. Once you've got all that, we can go ahead and throw in some olives. You might have one, two, or all three of these. If you don't, you'll get some kind of strange brownish looking thing. You'll have to go by the color.
In a large pot, heat 2 girls looking for men tbsp olive oil over medium heat. Once it's hot, add your garlic and cook for a couple minutes, stirring it constantly. You may need to break it up a bit, because it's very spicy and it'll take a bit of time. Stir in 2 tsp red pepper flakes, 1 tsp cumin, a little black pepper, a bit of salt, and 2 tsp dried oregano. Add the diced tomatoes, the oregano, salt, and fresh lemon juice. Bring to a boil, then turn down to low and cook until the tomatoes are tender, about 20 minutes. Add your chicken back to the pot and stir it around for a couple minutes. Stir in the parsley and cilantro. Add the chili sauce, which you could also use ground beef, and 1 tsp of salt. Bring it to a boil again, and stir in the onions and green chilies. Cook it until the onions are soft and the chilies are fragrant, about 5 minutes. Remove the lid, and add the shredded cheddar cheese and salt. Stir well, and let the mixture cool. In a blender or food processor, blend everything together until smooth.
Melt some butter in a skillet over medium-low heat. Add the sliced onion and a tablespoon of butter. Stir until the onions start to brown, 3-4 minutes. Remove from heat, and stir in the cheddar, garlic, salt, pepper, and cilantro. Add a little bit of butter if needed to keep the sauce from sticking to the pan. Add a pinch of sugar, and stir the mixture to combine. Remove from the heat, and sprinkle with salt. Serve immediately, and enjoy. Notes I added some bacon to the onions, in case you don't like onion rings. I hope this recipe will make you feel better about your eating habits, or at least remind you of the importance of not eating as many carbs, as possible.
